Open-face Kale and Beef Tacos

So my housemate introduced the Mindy Project to me the other day, and now it’s always on my computer screen. Episode after episode of a 28 year old chubby single woman who fights a constant battle with finding the right man as much as her love-hate relationship with food? Who doesn’t want to watch that? I’ll tell you who. Super social 28 year old models with hunky mancandy boyfriends, that’s who. But that’s 0.01% of the world’s population. Maybe even less.

In case you were wondering (the awesome people that you are), my knee is doing better. I’ve been holding back on lifting, which is a bummer. :( But I’m going to get back on it starting next week! I’ve also got to “get in as much shape” (as in, WOD till I’m so sore I don’t even feel my lady jiggles) as I can before the big Halloween party on Friday night. I’m still tossing around some lame costume ideas here and there, so if you have any last minute, minimal-work-required, ideas, PLEASE help a sister out.

This week, I’ve also been blessed with the joys of the lady curse. Ladies (and guys who have girlfriends, sisters, mothers, daughters), most of you probably suffer from gut-wrenching cramps, fluctuating emotions and uncontrollable  binge-eating cravings. I even have girlfriends who don’t leave their beds for 4 days every month! I don’t get any of these symptoms, but I do get lower back aches and bloating. It’s a great feeling really, struggling between staying upright to compensate for the life-sucking ache in your vertebrae and the pit of bricks in your stomach that your lunch turned into. Guys have it so bloody easy (see what I did there?) Can you imagine doing deep back squats and burpees with a wet diaper on? It’s like my uterus is just going to fall out. For everyone to see. 

This is great. You probably won’t have any appetite to eat now. But you can make these anyway.

So I made these Paleo beef-on-kale tacos. I was going to call them Thai beef wraps, but I realised there was nothing Thai about them.

IMG_9188Ingredients:-

1 bunch fresh kale, stalks removed

2 large carrots, cut into 1cm strips

Crockpot shredded beef

Palmful of fresh parsley, chopped

1 tablespoon grass fed butter

1 tablespoon olive oil

1 tablespoon garlic powder

Salt

Method of Madness:-

  1. Preheat the oven to 330°F. 
  2. In a large bowl, place kale leaves. Drizzle olive oil, garlic powder and a pinch of salt and mix well.
  3. Place on aluminum foil or baking trays and bake for 12 minutes.
  4. While waiting, heat butter in a pan over medium heat. Cook carrot strips in pan, flipping occasionally to cook evenly.
  5. Once cooked, turn heat off and toss carrots with chopped fresh parsley.
  6. Assemble the taco by placing the crispy kale as the shell, grilled carrots and the crockpot beef shreds on top.
  7. Squeeze some lime juice over it and sprinkle with a smidgen of salt. 
  8. Eat and be merry!
